SAM Magazine-Keystone, Colo., Mar. 11, 2008-Keystone Resort has expanded its commitment to the environment by serving sustainable seafood at several of its restaurants. Keystone's move will help support the long-term viability of the ocean and individual marine species; according to a recent United Nations report, nearly 25 percent of the world's stocks of fish are over-fished or depleted.

 

This latest move complements Keystone's commitment-and that of parent company Vail Resorts-to its "Appetite for Life" program, which is based on sourcing ingredients produced in a healthy sustainable way (read: organically).

 

"Serving sustainable seafood is a natural progression for Keystone," said Paul Jeppson, VP of hospitality at Keystone. "Keystone serves more than 24,000 pounds of fish per year." Restaurants that are now serving sustainable seafood include Keystone Lodge, Conference Center, Keystone Ranch, Ski Tip Lodge, the Inn at Keystone, and Paisano's restaurant. For the 2008-09 season, the sustainable seafood initiative will include the on-mountain dining facilities at Keystone.
